1. Gluten Sensitivity & Celiac Guidelines
Qdoba does not have dedicated gluten-free kitchens, but the vast majority of core ingredients are naturally gluten-friendly. Our Cilantro Lime Rice, Seasoned Brown Rice, Black Beans, Pinto Beans, Adobo Chicken, Grilled Steak, Carnitas, Brisket, Guacamole, 3-Cheese Queso, and all fresh salsas contain no gluten ingredients.
Items Containing Gluten to Avoid: All flour tortillas (5.5-inch, 10-inch, and 12.5-inch), crunchy flour tortilla salad shells, cookies, brownies, and churros. Tortilla chips are made from corn but are cooked in fryers that may share oil with wheat items.
2. Vegan & Plant-Based Diners
Building a 100% plant-based meal at Qdoba is seamless. Start with a base of cilantro-lime or seasoned brown rice, slow-cooked black or pinto beans (which are 100% vegetarian with no animal lard), seasoned Impossible™ plant protein or double sautéed fajita veggies, fire-roasted salsa verde, and generous scoops of hand-mashed guacamole (free of charge!).
3. Keto & Low-Carb Guidelines
For ketogenic diets, order a Keto Bowl built on crisp shredded romaine lettuce, double flame-grilled adobo steak or chicken, signature 3-Cheese Queso, shredded cheddar jack, cotija cheese, pickled jalapeños, and fresh guacamole. This meal provides under 12 grams of net carbs with high satiety healthy fats and protein.
